Tengra Fish is cleaned carefully and served whole. In the southern parts of the Indian subcontinent, this fish is known by the name Etta Koori. Tengra fish is a rich and essntial source of Omega-3 fatty acids and proteins. This high in fibre freshwater fish has a very lean meat with a mild, sweet taste and a firm texture. All thanks to its low density of the little bones.
To store fish properly, ensure it's fresh with clear eyes, firm flesh, and a mild sea odor. Refrigerate immediately in a shallow dish covered loosely with plastic wrap or in a sealed container to prevent cross-contamination, keeping it between 32°F to 39°F (0°C to 4°C). For longer storage, tightly wrap in plastic wrap or foil and freeze, removing air to prevent freezer burn. Thaw frozen fish in the refrigerator overnight or under cold running water. These steps maintain fish quality and safety.
